Fit Hemendex

Hemendex is a beloved traditional Slovakian breakfast, typically made with bacon, eggs and onions. In this lighter, healthier version, I replace bacon with lean turkey ham and colourful peppers and keep it keto-friendly and high in protein. This satisfying breakfast will keep you full and energized until lunch without the need for snacking.
Ingredients
2-3 slices fo turkey ham
2-3 eggs
1 small onion
salt and pepper to taste
smoked paprika
few slices of red or yellow bell pepper
olive oil or ghee for sautéing
toppings, sumac, black sesame seeds or chives
Instructions
Place a few drops of oil in a small pan and lay the turkey ham slices on the bottom. Then arrange the chopped peppers around the ham to create a border for the eggs, especially if you are using a large pan.
Crack the whole eggs into the center of the pan so the peppers frame them and place onion slices on top. Season with salt, pepper and a pinch of smoked paprika.
Keep the heat on very low to prevent the ham from burning and cover with a lid to let the eggs cook evenly. Watch the eggs closely, when the whites are set but the yolk is still runny, remove the pan from the heat.
Transfer to a plate and serve with sliced avocado, spinach or sauteed mushrooms on the side. Top with a sprinkle of black sesame seeds, sumac or chives for that extra flavour and health benefit.
