Carrot Cake with Dark Chocolate

Who says indulgence can't be wholesame? This carrot cake is packed with nourishing ingredients and rich flavour, without the guilt. Made with fresh carrots, coconut and dark chocolate, it is the perfect treat when you're craving something sweet yet nourishing.
Ingredients
2 cups grated carrots
2 cups shredded coconut
1 cup of milk or plant milk of your choice
1 cup organic spelt or buckwheat flour
2 tsp baking soda
1 tbs ground cinnamon
3/4 cup coconut oil
Sweetener of choice, I use pure monkfruit or date syrup made by blending few dates with water
1 bar, 100g good-quality dark chcolota, choopped
1tbs ghee
Instructions
In a large bowl, combine all the ingedients except the dark chocolate and ghee. Mix well until a smooth batter forms.
Line a small baking tray (approximately 35x25 cm) with parchment paper and pour in the batter.
Bake in a preheated oven at 180 °C for about 30 minutes. Once baked, allow the cake to cool completely.
Melt the ghee in a saucepan over low heat. Add the dark chocolate and stir continuosly until fully melted and smooth.
Spread the melted chocolate mixture evenly over the cooled cake and allow it to set before serving.
